As a hands-on chocolatier, I oversee each micro batch—from the moment high-grade couvertures are unwrapped to the final tempering stroke—ensuring that every ingredient and preparation, mostly in-house and handmade using our recipes, meets Maison Tsubame’s exacting standards.
Whenever possible, we cultivate direct relationships with artisanal growers, but we also partner with trusted brokers to source specialty beans and rare nuts that aren’t always available straight from origin. By paying fair prices that support sustainable farming practices—whether negotiated face-to-face or through carefully vetted brokers— we commit that behind every of our chocolate is a commitment to excellence, care, community, and trust.

Common Questions
How should I store Maison Tsubame chocolates?
Keep them in a cool, dry, dark place away from sunlight and strong aromas. A wine fridge set around 12–16 °C is ideal. Place the box in an airtight container to avoid humidity and odours. Avoid the household fridge but if you do leave them to come back at room temperature
How long do they keep?
For peak freshness and texture, we recommend enjoying our bonbons within 2 weeks of purchase.
